• Sour-salty-sweet mango pickles :
Ingredients :
1. Raw mangoes – 1 kg
2. One cup of oil
3. Garlic – two teaspoons
4. Ginger paste – two teaspoons
5. Turmeric powder – two teaspoons
6. Sugar – three tablespoons
7. Salt – as per as quantity
8. Vinegar – half a cup
For making the spice :
1. Fenugreek powder – one teaspoon
2. Cumin powder – two teaspoons
3. Fennel powder – one teaspoon
4. Cooking powder – two teaspoons
5. Mustard paste – three tablespoons
6. Dried lentil powder – two tablespoons
7. Black cumin powder – one teaspoon
Procedure :
1. First, just peel the raw fruit, rub it with salt and leave it overnight.
2. The next day, wash the fruit, and with mangoes add ginger, turmeric and garlic and put it in the sun.
3. Then put a pan on the gas and let the oil heat up with the oil.
4. When the oil is hot, leave the fruit and cook well. Stir until smooth.
5. Now put another pan and heat the oil and add sugar in it.
6. When the sugar is rounded and the juice is made, season it well with all the spices.
7. Then you have to grind it with raw fruit.
8. Once it is cooked, take it down with anise powder and fenugreek powder.
• Mango-Garlic Pickle :
Ingredients :
1. Raw mangoes pieces without peel – two cups
2. Mustard oil – one cup
3. Chopped garlic – one cup
4. Fenugreek – one tablespoon
5. Fennel – one tablespoon
6. Cumin – one tablespoon
7. Black cumin – two teaspoons
8. Turmeric powder – two teaspoons
9. Dried chilli – 10-12
10. Sugar – two tablespoons
11. Salt – as per as quantity
12. Vinegar – half a cup
Procedure :
1. First of all, cut the fruit pieces and put salt in it and leave it overnight.
2. The next day it should be washed and dried in the sun for a few hours.
3. Prepare all the spices in the batter beforehand.
4. Now put the pan on the gas and let the oil heat up. When the oil is hot, grate it well with garlic.
5. Then add grinded spices and fruit pieces and cook it for a while more.
6. When you find the fruit is little soft, it should be stirred well with sugar.
7. Then when the pickle is cold, fill the bottle and pour the mustard oil up to the mouth of the bottle.
• Mango-onion pickle :
Ingredients :
1. Raw mangoes – one cup
2. Choped onion – one cup
3. Cumin powder – two teaspoons
4. Black cumin powder – half a teaspoon
5. Mustard powder – one tablespoon
6. Chili powder – two teaspoons
7. Mustard oil – half a cup
8. Salt – as per as quantity
Procedure :
1. Dry the fruit and onion pieces in the sun for one day.
2. The next morning, put the fruit and onion with all the spices and fill the bottle.
3. After that you have to soak in the sun for a few days. Then the pickle will be ready.
• Mango Salt Pickle :
Ingredients :
1. mangoes pieces – 4 cups
2. Salt – 2 tbsp
3. Black pepper powder – 1 teaspoon
4. Dried chilli – 3 tbsp
5. Fennel powder – half a teaspoon
6. Turmeric powder – 1 teaspoon
7. Five seasoning spices- 1 teaspoon
8. Mustard oil – 2 cups
Procedure :
1. Peel all the fruit, then squash and grate it and soak it in salt water for 5 to 6 hours.
2. Now take it out of the water and let it dry in the sun, before that don’t forget to add turmeric and salt.
3. Then add fennel powder and black cumin powder and put it in the sun again.
4. Now fill the dried fruit in the bottle.
5. Then fry five seasoning spices in oil and fill the bottle with oil.
6. Bind the mouth of the bottle with a cloth and keep it in the sun for a few days. This pickle is going to rock.
